Our Cold Smoked Haddock is prepared and smoked by hand at Hut 8 on Crag Path, Aldeburgh. We start with fresh haddock fillets, lightly salted, then cold-smoke them using locally sourced oak shavings for a gentle, aromatic flavour. Each fillet is golden, firm and naturally tasty — perfect for fish pies, chowders, or simply poached with butter and milk.
We smoke in small batches to keep the quality consistent and the flavour unmistakably coastal. As every fish is hand-cut, weights may vary slightly; we aim to be as close as possible to your selected portion size.
