Samphire is often called “sea asparagus” for its vibrant green colour and snappy texture. It grows naturally along tidal estuaries and mudflats, absorbing the mineral-rich seawater that gives it its distinctive flavour. Simply steam or blanch for a minute or two, add a touch of butter or olive oil, and it’s ready to serve.
